Veggie Frittata Diabetes-Friendly Recipe

Try this simple egg dish for an easy diabetic recipe!
Eggs are naturally low in carbs and rich in protein, and diabetic diet recipes are perfect for maintaining a healthy blood sugar.
Ingredients
6 eggs
2 tablespoons freshly chopped basil
1/2 cup cut chopped broccoli
1/2 cup sliced mushrooms
1/2 cup diced onion
1/2 cup diced tomato
1/3 cup goat cheese
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
*optional - hot sauce to taste
1. Fry
Preheat broiler. In an oven-proof medium skillet, heat oil, mushrooms, broccoli and onion over a medium-heat stove.
2. Mix
In a medium bowl, whisk eggs, basil, salt and pepper. Pour mixture over veggies in skillet.
3. Simmer
As mixture sets, run a spatula around the edge of skillet to be sure the bottom layer gets fully cooked. Sprinkle cheese. Broil for 4-5 minutes.
4. Enjoy
Let stand for 5 minutes before serving.
